Capture Rates: Buffet Concept

Goals

To determine the capture rates at Kitchens on Kent and Melba Restaurant along with a profit and loss statement analysis of each to assess the success and performance of the buffet concept at each venue.

Early Findings

In our previous research, we were able to provide an overview of Kitchens on Kent and Melba Restaurant; demographic profile of guests at Kitchen on Kent Restaurant; and profit and loss statement analysis of Kitchen on Kent Restaurant. In this research, we have determined the capture rates at Kitchens on Kent and Melba Restaurant. Additionally, we also determined the capture rates at Eight Restaurant.

Breakfast: 50%

Capture Rates at Eight Restaurant (Auckland), as of 2019

Breakfast: 43%
Lunch: 3.5%
Snack: 0.1%
Dinner: 12%
