What can be Extracted from Potato Peels

• Phenolic antioxidants like "hydroxycinnamic and hydroxybenzoic acid derivatives and flavonoids" have been extracted from potato peels.
• A high phenolic content, including acids, can be extracted from potato peels.
• Potato peels contain phenolic acids and the largest part is chlorogenic acid (CGA) at 753.0–821.3 mg/100 g.
• Other acids that are found in potato peel extract are:
• Gallic acid (GAC)- 58.6–63.0 mg/100 g. 
•  Caffeic acid (CFA)- 278.0–296.0 mg/100 g. 
•   Protocatechuic acid (PCA)- 216.0–256.0 mg/100 g. 
•  Vanillic acid- 43.0–48.0 mg/100 g. 
•  P-Hydroxybenzoic acid- 82.0–87.0 mg/100 g.  
•  P-Coumaric acid- 41.8–45.6 mg/100 g.  
• Potato peels are a source of natural antioxidants which can be used in the food industry.
•  Dietary fibers are also extracted from potato peels.

Summary

• Our initial hour of research focused on ensuring that the research question could be answered using publicly available sources. In the early findings, we have provided some extracts of potato peels. We can continue with research and provide a more in-depth response.
• We were not provided a geographic focus for this project, so we assumed a broad approach and looked globally. If a more targeted approach is desired, for example, the United States, this would have to be clearly communicated to us in any reply within the scoping box.
• As a reminder, Wonder only uses publicly available sources to answer all research questions. We do not do primary research, and we do not have access to paid databases or paywalled reports, but we can cite them in research for reference only [in case purchase is desired]. Also, no indication of paid resources to add value to this research was seen in the discovery phase.
